1 c onion, chopped
1/2 c green pepper, chopped
2 c celery, chopped
1 clove garlic, crushed in garlic press
1 can light kidney beans
1 can of diced petite tomatoes
1 8-oz can tomato sauce
1 or more Tbsp. chili powder
1/2 tsp. sea salt
1 lb. lean ground beef ( or ground meat of your choice)
1Tbsp. oil

Directions:
Directions:
Saute the onion, pepper, celery, and garlic in oil until the onion is golden brown. Add the beef and cook until browned.
Drain and rinse kidney beans. Stir in kidney beans, tomatoes, chili powder, salt and tomato sauce. Simmer covered for at least 45-50 minutes.
Just before serving, taste to see if more chili powder is needed.
