Ingredients:  
3-5 lb beef roast (the cheaper the cut, the better the sandwich)
1 onion, diced or sliced
3 garlic cloves, minced
1 pkg Good Seasons dry Italian dressing mix
1 can of beef consomme
1 can of flat beer
1 jar of pepperocini (if you buy it sliced, it's less work; if you like it hot get the hot version rather than the mild)

Directions:
Directions:
Combine all ingredients in your crockpot, including the juice from the pepperocini. Cook on low for at least 8-10 hours. Take the meat out and shred it, using two forks. Put the meat back into the liquid in the crockpot.
Serve on soft hoagie rolls with provolone cheese.
