1 lg eggplant
2 cloves garlic
2 T tahini
1/4 tsp salt
1 T lemon juice
1/2 C yogurt

Directions:
Directions:
400º oven. Pierce eggplant with knife a couple of times then place on baking sheet in oven and bake until shell is crispy and center is soft, approximately 1 hour. Cool. Scoop insides of eggplant into food processor add remaining ingredients and puree until creamy..Chill and serve with bread or vegetables
