4 to 6 medium potatoes cubed
1c. celery
1 sm. onion chopped
2 carrots chopped
You can add more veggies, this is just a guideline.
2 tsp. salt (optional)

2 T. oleo or butter
1 1/2 c. milk (may add flour to make a thicker soup)
1 T. chopped parsley
2 chicken bouillon cubes (optional)
1 lg. jar pimentos with oil (optional)
salt and pepper to taste

Dumplings (optional)
2/3 c. flour
2 eggs
2 T. water
pinch of salt (I make a half recipe, since Johnny doesn't care for dumplings)
Directions:
Directions:
Cover potatoes, celery, onion and carrots with water, add salt (optional), cook until tender. Add oleo,milk,parsley and pimentos, Salt and pepper to taste.

Dumplings (optional)
Mix together flour,egg,water and salt, drop into hot soup. Dumplings swell when added to hot liquid, so make them small.
