5 lg flour tortillas
10 T cream cheese
1 C cheddar or Monterrey Jack cheese, grated
1 jalapeno pepper, chopped fine
1/2 red bell pepper, chopped
4 green onion, slice thin
1/4 C parsley, minced

Directions:
Directions:
400º oven
In bowl combine jalapeno, red pepper, onion and parsley. Spread 2 T cream cheese on one side of Tortilla. Sprinkle with 1/5 of veggie mixture.
Sprinkle with 1/5 of cheese. Roll into a tube, place on baking sheet and spray with cooking spray, turn and spray. Bake 10 - 15 minutes until crispy. Serve with sour cream and salsa.
