1 lg Acorn Squash
1/4 C olive oil
salt & pepper
1 T Fresh sage, chopped
1 T balsamic vinegar
1 tsp dijon mustard
1 clove garlic, minced

Directions:
Directions:
Cut squash in half, remove seeds, cut crosswise into 1/4" slices, place in lg bowl add half of the oil, salt & pepper, toss to coat.
Grill squash on med-high heat with lid closed until tender and browned, turning once, approximately 10 minutes. Transfer to serving dish
In small bowl, whisk together sage, vinegar, mustard, garlic and remaining oil, salt & pepper. Drizzle over squash and serve. I sometimes add more balsamic to the dressing.

Poke a couple of holes in the squash an microwave for 1 - 2 minutes, this will make it easier to cut.
