2 cups uncooked Scottish style Oats
1 1/2 cups whole wheat flour
1 tsp. cinnamon
1/2 tsp baking soda
1/4 tsp. salt
1 cup honey or maple syrup (or combo)
3/4 cup softened butter
1 tsp. vanilla
1 egg
1/2 cup chopped nuts (optional)
1/2 cup raisins (optional)

Directions:
Directions:
Preheat oven to 375º. Prepare cookie sheets with light coat of oil or margarine.
Combine dry ingredients separately, mix well.
In a mixing bowl, mix honey/syrup, butter, and vanilla until smooth, then add egg . Blend the dry ingredients into liquid and mix thoroughly. Stir in the optional raisins &/or nuts.
Place rounded spoonfuls of blended ingredients onto cookie sheet. Bake approx. 10 mins. Cool and enjoy.
Makes approx. 50 cookies
