Ingredients:  
Boneless, skinless chicken, cut into serving pieces, (use about 2 oz per person,)
Onions, 1-2 finely sliced,
Potatoes, cut into bite-sized pieces,
Green Sicilian olives, preferably with the pits removed,
Tomato sauce, about 2-3 cups,
Olive oil, for sauteing,

Large frying pan with cover,

Directions:
Directions:
Coat bottom of frying pan with olive oil and saute the onions,
Then add the potatoes, cover and cook over medium heat for several minutes,
Add chicken pieces and about half of the tomato sauce,
Cover and continue to cook several minutes until chicken looks almost cooked,
Add olives and the rest of the tomato sauce and continue to cook until chicken is thoroughly cooked and the potatoes are tender.

Serve hot with Italian bread and a nice big green salad.

You can use any meat on hand or make it vegetarian by eliminating the meat altogether or by adding tofu instead of the meat.
This has traditionally been made with rabbit.
