3 c. sugar
1 (15-oz.) can pumpkin
1 c. oil
2/3 c. water
4 eggs
3 1/2 c. flour
1 T. cinnamon
1 T. nutmeg
2 t. baking soda
1 1/2 t. salt
1 c. mini chocolate chips

Directions:
Directions:
Preheat oven to 350º. Grease and flour 3 large (9 X 5) loaf pans. in large bowl, combine sugar, pumpkin, oil, water, and eggs. Mix until smooth. Add dry ingredients, mix well, then fold in chocolate chips. Fill pans 1/2 - 2/3 full. Bake 1 hour. Cool in pans, then on wire rack.

I like to make this in mini bread pans for the holidays as gifts. One recipe will fill 8 mini bread pans. Decrease baking time to 30-35 minutes for the smaller pans.
