1/4 cup fresh lemon juice
4 cloves roasted garlic
1 Tbsp. Dijon mustard
1 Tbsp. lowfat Greek yogurt
3 anchovy filets (or equivalent in anchovy paste)
1/2 cup olive oil
1/4 cup grated Parmesan cheese

Directions:
Directions:
Put first five ingredients in food processor or blender (or use immersion blender), While processing/blending, SLOWLY drizzle olive oil & process a little at a time until you get a creamy but not thick emulsion. Add Parmesan cheese and hand blend before using over salad.
