Pumpkin Chocolate Chip Cookies Recipe

2 1/2 cups flour
1 TSR. baking soda
1 TSR. baking powder
1 TSR. ground cinnamon
1 TSR. ground nutmeg
1/2 TSR. salt
1/2 cup (1 stick) unsalted butter
1 1/2 cups sugar
1 cup canned pumpkin puree
1 egg, beaten
1 TSR. vanilla extract
1 package chocolate chunks
(they are not nearly as good with chocolate chips)

1. Set oven to 350º . Line baking sheets
(officially you're supposed to use parchment paper but I use tin foil)
2. In a medium bowl, sift together flour, baking soda, baking powder, cinnamon,nutmeg and salt. Set aside.
3. In a mixer with paddle attachment, cream butter and sugar on medium speed until fluffy. Add pumpkin, egg, vanilla and beat just until blended.
4. Mix in the dry ingredients.
5. Remove the bowl from the mixer stand. With a rubber spatula stir in chocolate chunks.
6. Drop the batter by heaping tbsp. 1 inch apart on baking sheets.
7. Bake cookies for 13 to 15 minutes or until lightly browned. Let the cookies cool on sheets for a few minutes. Transfer to wire racks to cool completely.
