2 Tbs oil
1 large red onion chopped
2 cloves garlic diced
3 Tbs. fresh cilantro chopped
10 oz bag of corn cooked as directed on bag
1 (15 oz) can black beans drained
1 bunch green onions thinly sliced
20 cherry tomatoes halved
2 limes juiced
salt & pepper to taste

Saute red onion 5 minutes in the oil. Add garlic & cook 1 minute longer. Add 1/4 cup of water, corn, beans, tomatoes, & green onions. Heat for 5 more minutes, tossing lightly. Remove from heat & add cilantro & lime juice, salt & pepper. -
