1/4 C fresh lime juice
1/3 C water
2 T vegetable oil
2 cloves garlic, pressed or finely minced
3 t vinegar
2 t soy sauce
1-2 t liquid smoke
1 t salt
1/2 t chili powder, or chipotle chili powder
1/2 t cayenne pepper
1/4 t ground black pepper
1/4 t onion powder

Combine all ingredients in mason jar and shake well. Put meat in ziploc bag and pour some marinade over. Put onions and peppers in separate bag and pour some marinade over them, too. Marinate both several hours (or overnight), then grill.

My favorite meat to use is flank steak. Cook it whole on the grill, then slice thinly against the grain. For the peppers, I quarter them, then slice after grilling. For the onions, I slice them 1/4 inch thick, then slice smaller after grilling.
