1 2 1/2-3 lb Chicken in pieces, breasts halved crosswise.
1 1/2 cups Buttermilk
Salt n Pepper
2 cups Flour
3-4 cups Vegetable Shortening

Directions:
Directions:
Place chicken pieces in a gallon size reseal bag. Mix buttermilk w/1tespoon salt and 1/2 t pepper and pour into bag. Refrigerate 2hrs of up to 24hrs.
Measure flour, 2 t salt and 1/2 t pepper into large bag. Drop chicken pieces in bag, several at a time to coat. Remove, shake off excess and place on a rack.
Heat oil to 350
Place pieces skin side down in grease making sure to maintain high oil temp of 250 or more.
Cover and cook for 5 min. Check and or turn if browning unevenly.
Cover and continue 5 more min or till evenly browned.

Herb Crust: add chopped parsley, thyme, chives, tarragon, and/or oregano. to buttermilk soak and another 1/4 cup chopped herbs to flour.
