Beef Stroganoff Recipe

Butter
1 1/2 Tbsp. flour
1 101/2 oz can condensed consommé, undiluted
1/2 cup dry sherry
1 tsp. prepared mustard of choice
2 Tbsp. tomato paste
1 large onion chopped
1 lb. fresh mushrooms quartered
1 1/2 lb. lean sirloin steak or fillet of beef, cut into thin strips, 2" long, 1/2" wide
1/12 tsp. salt
1/2 tsp pepper
1/8 tsp. freshly ground nutmeg (pinch of dry ground if fresh unavailable)
1/4 cup sour cream (I use lowfat)
I serve over noodles, but can serve with boiled potatoes if you prefer

In saucepan melt 1 Tbsp. butter; in it brown flour lightly; then stir in consommé, sherry, mustard and tomato paste. Bring to boil and cook until thickened. Set aside.
In large skillet melt 2 Tbsp. butter; in it saute onion and mushrooms until golden brown (in batches so as to saute rather than steam). Next add beef strips and brown, stirring frequently. Stir in salt and pepper, then the sauce. Simmer, covered about 20 mins; until meat is tender - stir often so as not to stick..watch heat.
In small bowl, beat together sour cream, nutmeg and part of the sauce& add to meat in skillet. Turn off heat until ready to serve...when ready to serve..Heat gently and serve over cooked noodles or potatoes.

Sherry and nutmeg are my additions...may substitute water for sherry and omit nutmeg if you prefer.
