Baked Chicken Croquettes Recipe

1 chicken bouillon cube
3 tbs. boiling water
1/2 cup mayonnaise
1 tsp. grated onion
1 cup fresh breadcrumbs
2 cups chopped cooked chicken

1/4 cup dry crumbs

Sauce:
2 tbs. butter
2 tbs. flour
1 cups milk
grated cheddar cheese - to taste

Directions:
Directions:
Dissolve bouillon cube in boiling water. Stir into mayo and onion. Add soft bread and chicken. With wet hands shape into 6 croquettes then coat with dry bread crubs. . Bake on ungreased cookie sheet at 450º for 15 minutes. Turning once.

Sauce: Melt butter and whisk in flour til smooth. Add milk
stirring constantly until smooth, then stir in cheese.

Personal Notes:
I used the rotisserie chicken from Sam's Club and the flavor was great. I also used white bread for the fresh bread crumbs and toasted white bread for the dry bread crumbs. I added s& p and dry chicken base seasoning to the toasted bread crumbs.

For the sauce, I also added the dry chicken base to give it a chicken gravy taste.
