1 can (12 oz.) Carnation Evaporated Milk
2 reduced sodium chicken flavor bouillon cubes
1 teaspoon onion powder
1/2 teaspoon dried thyme
salt and pepper to taste
4 cups potatoes, peeled, cut into 1/4 -inch slices (Yukon Gold)
2 cups sweet potatoes or yams, peeled, cut into 1/4- inch slices
1/2 to 1 cup grated Parmesan cheese

Directions:
Directions:
Make a rue sauce in a pot with melted butter and about 1/8 cup of flour. Slowly stir in the evaporated milk. Cook until a little thickened, stirring so as not to get lumpy. You may need to add more milk etc. Add bouillon cubes, onion powder and thyme to the rue sauce and cook over medium heat, stirring occasionally, cooking until bouillon is dissolved. Partially cook potatoes in a large pot of salted water by bringing to a boil and reducing heat and cooking enough... but not fully. Drain potatoes. Place in a buttered casserole. Pour milk mixture over potatoes. Sprinkle with Parmesan cheese and work this into potatoes.. Bake in a 375º oven for approx. 30 minutes. (Check potatoes with fork). You may sprinkle more cheese on top . Serves 8.
