A 3-7 lb. Rib Roast
Thoroughly rub with freshly ground salt and pepper

Directions:
Directions:
Preheat oven to 375º
Place roast in shallow greased roasting pan
Place roast in oven for 1 hour.
Turn oven OFF. Leave roast in oven and DO NOT OPEN OVEN DOOR!

Before ready to serve, Turn oven back on to 375º for 30 minutes - again resist opening the oven door until this last step is completed.

Take out of oven and tent with foil to rest for 10 minutes before carving.
