Dough Crust
2 1/4 cups flour
3/4 cup sugar
1/4 tsp. salt
1 large egg
1/2 cup Crisco shortening
1 stick butter
1/2 tsp. pure vanilla extract

Pineapple Filling
1 lb. can crushed pineapple
1/2 cup sugar
1/2 tbsp. cornstarch
3 1/2 oz shredded coconut

Directions:
Directions:
Mix egg, shortening, butter, and vanilla together by hand. Add the flour, sugar, and salt and mix until crumbly like a pie crust. Grease a 9x13 cookie sheet and press 3/4 of the dough crust onto the sheet.
Combine pineapple, sugar, and cornstarch and cook slowly on stove top for about 15 minutes. Let cool. Spread pineapple filling over dough crust.
Combine remaining 1/4 of the dough crust with shredded coconut and sprinkle over filling.
Bake in preheated 375º oven for 35 minutes until lightly brown. Allow sheet to cool on wire cooling rack.
Yields about 2 dozen 2 inch squares.
