Pie Shell
1 ½ cups flour
¼ tsp. salt
2/3 cup Crisco shortening
1 tbsp. granulated sugar
1 large egg
6 tsp. cold water or as needed
Pie Filling
1 ½ lbs. of whole milk ricotta cheese
½ cup cooked white rice
3 large eggs
½ cup granulated sugar
1 tsp. pure vanilla extract
1 tsp. cinnamon

Directions:
Directions:
Combine flour, salt, shortening, sugar and egg with water a little at a time until you are able to form a ball of pie crust dough. Roll out pie crust and place in 9 inch Pyrex glass pie plate. Cut excess pie crust into strips to make a lattice pie crust top.
In a large bowl, mix ricotta, rice, eggs, sugar, vanilla, and cinnamon until combined well and spoon into uncooked pie shell.
Bake pie in preheated 400º oven for 45 minutes or until golden brown. Cool pie on wire rack.
