Aprox. 5 boneless, skinless chicken breasts
1 package taco seasoning
2 cans rotel

Directions:
Directions:
Combine everything into crockpot and stir to blend the seasoning with the rotel. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork. Sometimes I will also add beans and onions.

For tacos, serve the chicken with shell/tortillas and toppings of your choice. I've also used the chicken for enchiladas, nachos, burrito bowls, and chicken tortilla soup.

*When cooking this for only 1-2 people, I will half the recipe and still have plenty of leftovers.
