2-3 medium potatoes, peeled & diced
1 medium onion, chopped
1 T margarine
Water

Milk - 1/2 - 1 C
1 egg
flour

Directions:
Directions:
Simmer onion in margarine (bacon drippings are also good) in sauce pan; add potato, just cover with water. Bring to boil; cook until potato's are tender, "mash" potato's-do not drain, and don't mash completely.
Add milk, simmer - don't boil.
For Ribbles: beat 1 egg in small bowl, add flour & a little salt until the mixture is sort of firm. Cut this mixture into hot milk in small hunks (you don't want balls). Simmer until Ribbles float - 5 minutes or so. Season, and add a little butter.

My kids always called the Ribbles rubbles! This is good served with a favorite sandwich on a cold night. Note: this recipe is the way my mom's mother fixed it - it's an OLD recipe!
