3 c. milk
1 c. water
1 Tbsp. butter
½ tsp. salt
¼ tsp. pepper
1 c. grits
4 oz. reduced fat cream cheese

4 slices bacon
1 lb. peeled, deveined shrimp
1 c. sliced onion
2 c grape tomatoes, halved
1 tsp. chopped chipotle chile, canned in adobo sauce
1/8 tsp. ground or crushed red pepper

Directions:
Directions:
Combine first 6 ingredients and cook grits according to directions, using ¼ tsp. salt. Stir in cheese when done.

Cook bacon in large, nonstick skillet until crisp. Remove, reserving 2 tsp. drippings, crumble bacon.

Add shrimp to drippings in pan, cook 2 minutes on each side. Remove.

Add onion to pan, sauté. Stir in bacon, tomatoes, remaining ¼ tsp. salt. Add shrimp, pepper and red pepper. Heat through.
