1 lb. Ground pork
1/4 cup water
2 tsp. Fennel seeds
1/8 tsp. Caraway seeds
2 tsp. kosher salt
1 tsp. Fresh ground pepper
1/4 tsp. ground Coriander
1/2 tsp. dry crushed red pepper
1/8 tsp. Oregano
1/8 tsp. Garlic powder
1/2 tsp. sugar
Minced garlic to taste
1/8 tsp. ground Anise
1 Tbsp. Fresh chopped Italian Parsley leaves

Directions:

Mix all ingredients together.
Mix well with ground pork.
Regrind pork
Cover and refrigerate 24 hours before stuffing or bulk freezing.
