˝ crab meat
1 qt. heavy whipping cream
˝ c. minced garlic
˝ medium yellow onion, finely chopped
˝ c. green onions, sliced thinly
1 tbsp. salt
1 lb. small shrimp
1 c. unsalted butter
2 c. quartered small mushrooms
1 c. white wine
1 c. grated Parmesan


Directions:

Heat deep 12” skillet on high and sauté onion, garlic and mushrooms in butter until onion are translucent (3-5 minutes), stirring constantly to prevent burning. Add the wine (pinot grigio is my personal favorite). Add the shrimp and crab and stir till shrimp is cooked. Then turn the heat to low and add the Parmesan, green onions, salt and heavy cream. Stir till sauce thickens. Serve immediately over the fish of your choice.

Ponchartrain is great over almost any white flaky fish but my favorites are broiled flounder, mahi mahi and red fish.
