3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp salt
2 c. sugar
1 ¼ c. oil
1 - 8 oz. can crushed pineapple w/ juice
1 ½ tsp. vanilla
3 large eggs
2 c. diced bananas
1 c. chopped pecans

Directions:
Directions:
In a large mixing bowl, sift together flour, cinnamon, soda, salt, and sugar. Then add the oil, pineapple, vanilla, eggs, bananas & pecans. Mix by hand. Pour into a greased bundt or tube pan.

Bake @ 350 degrees for 1 hr. and 20 minutes. Cool before removing from pan.

Another great recipe from my dear friend, Ingrid Lea of Santa Fe, Texas. This cake is definitely better the day after it’s made and is so moist it’s almost gooey! Yum-O!
