6 cups boiling water
1 tsp salt
1½ cups hominy grits
1½ sticks margarine
1 lb. Velveeta jalapeno cheese (Mexican style) or add chopped jalapenos
3 eggs
1 tsp Tabasco sauce

Directions:
Directions:
Preheat oven to 350 degrees.

Slowly stir grits and salt into briskly boiling water. Reduce heat to medium-low. Cover. Cook 5-7 minutes or until thickened, stirring occasionally to prevent sticking. Remove from heat.

Add margarine and cheese. It blends best if both are cut into small chunks. Stir until margarine and cheese is completely melted.

Beat three eggs and add to hot mixture. Blend quickly to avoid cooking the eggs. Add Tabasco sauce. Blend.

Bake in 9x11 oblong pan at 350 degrees 30-40 minutes or until it bubbles and browns on top. Best if served warm. The recipe can be refrigerator and reheated in the oven or microwave.
