1 2# bag frozen hash brown potatoes (thawed)
1 small jar Cheese Whiz
1 12 oz. Carton sour cream
1 can Cream of Celery soup
1 stick butter
Salt & pepper to taste
1 cup grated sharp cheddar cheese
1 cup Ritz cracker crumbs (I actually use a little more)

Directions:

Heat butter, soup and cheese whiz just enough to melt the butter. Pour over potatoes. Add sour cream. Mix well and spread in a 9”x13” greased casserole. Sprinkle cheddar over and top finally with crushed Ritz crackers. Bake 40-50 mins at 350 degrees until lightly browned and bubbly.

This is a recipe from Southern Living from the early 1970’s and has long been a family favorite. We serve them most often with barbeque ribs or brisket.
