¾ cup butter, softened
¾ cup sugar
1 cup cooked carrots
2 cups flour
¼ tsp salt
2 tsp baking powder
1 tsp vanilla
1 T. orange zest

Directions:
Directions:
Cream butter and sugar. Add carrots. Stir together flour, salt and baking powder. Add to butter mixture. Mix in vanilla and orange zest.
Preheat oven to 375. Drop by spoonful onto cooking sheet lined with parchment paper. Bake 10 to 12 minutes. Frost with glaze below.

Glaze
1 T. butter, melted
1 ½ cup powdered sugar
Orange juice (enough to give mixture and thick but pourable consistency.)
Spoon over warm cookies.
