Mother's Lemon Pie Recipe

1/2 cup flour
3/4 cup sugar plus a little bit more
1/2 tsp salt
Put these ingredients in a bowl and mix with hands.

2 1/2 cups milk scalded
3 eggs - separated - beat eggs yolks a little. Set egg whites aside for meringue
Juice of 2 Lemons
2 tsp of lemon rind

Directions:

Gradually add flour mixture to scaled milk, stirring constantly. After mixture thickens put a small amount into egg yolks so they are the same temperature and it doesn't cook the yolks, then add the yolks to the mixture. Add lemon juice mix well then add the grated lemon rind.Cool completely, pour into cooked pie crust and then top off with meringue and brown.

My mother made this pie without a recipe. One time when she came and spent the weekend with me I had her make it and I measured out the ingredients and wrote down her directions.
