1/2 cup canned pineapple(crushed or tidbits)
1/4 c + 2 T. sugar
2 c flour
2 t baking powder
1/2 t salt
1/2 chilled butter
2 large eggs
2 T orange juice
1 t vanilla extract
1/2 t grated orange peel

Directions:
Directions:
Preheat the oven to 400º. Mix flour, baking powder, sugar and salt in a bowl. Mix eggs, vanilla, and orange juice in separate bowl. Cut in butter. Mix in egg mixture and pineapple. Fold out on floured surface and knead long enough for ingredients to stick together. Flatten and shape into about 8" circles. Score tops into desired sized wedges. Bake for 20 minutes on ungreased cookie sheet. Break apart where scored. Serve piping hot with butter.

Mom (Jane) and I went to Alaska upon a Princess Cruise Line the year she moved up north from Florida. We docked at Juneau and took a bi-plane to Taku Glacier Lodge and had a delicious salmon barbecue right next to the famous Taku Glacier. These scones were our favorites. Every time I bake them memories of mom and our Alaska trip come to mind.
