1 14½ oz. can chicken broth
2 medium carrots shredded or ½ package of pre-shredded carrots
4 c. herb stuffing mix
6 skinless boneless chicken breasts
¼ c. fresh lemon juice
¼ c. honey
1 T. fresh chopped parsley
Directions:
Directions:
1. Preheat oven to 375º. In large saucepan, mix broth and carrots. Bring to a boil over medium high heat. Remove from heat and add stuffing. Mix lightly. Spoon into shallow baking dish.
2. Mix honey, lemon juice, and parsley in small bowl. Generously brush both sides of chicken with mixture and arrange over stuffing.
3. Bake for 20 minutes. Generously brush chicken again with lemon honey mixture. Sprinkle remianing lemon honey mixture over stuffing.
4. Bake 10 minutes or until chicken is done. Broil dish briefly if you want a brown top.

Kids and adults love this. Again, another simple weekday entree that allows you time to make a salad while the chicken and stuffing cook in the oven. Also good with a green vegetable.
