1 medium onion (chopped)
¼ tsp. salt
¼ tsp. pepper
¼ tsp. allspice
¼ cup parsley
1 tbsp. flour
¼ cup water
6 eggs
½ tsp. baking soda

Directions:
Directions:
Mix all ingredients together. Pour into a greased pie plate. Bake in 350° oven for 30 minutes.

You can also make iggi like you would make pancakes, with a little bit of butter in a frying pan, adding one spoonful at a time to make individual pieces. I prefer this version more than the pie version.

Imme made iggi during the Lenten season when we did not eat meat. It is very much like quiche but it includes parsley. Imme also made iggi when she made a Mazza. It added variety to the table.
