½ cup sumac
2 bunches parsley (about 3 cups chopped)
1 bunch fresh mint (chopped to make about 1 cup)
3 scallions (chopped)
3 sliced tomatoes
½ bunch lettuce (about 2 cups)
3 cucumbers (peeled and cut in small pieces)
½ cup olive oil
1 tsp. salt
1 tsp. allspice
½ tsp. pepper
1 loaf toasted pita bread

Directions:

Wash the chopped parsley and mint and drain well.

Mix the onion and tomatoes together. Add the lettuce, cucumber and sumac. Mix well. Add salt, allspice and pepper and mix well. Add the washed parsley and mint and stir everything together. Add the olive oil and stir.

When you are ready to serve this dish, you can break up the loaf of toasted pita bread and add the broken pieces to the vegetables. This will prevent the bread from becoming soggy too quickly.

Fetoosh is a wonderful summer salad. Most of the ingredients can be picked from the garden and the taste is very refreshing. When we lived in Lebanon, my grandmother Teta Najla used to go out to her beautiful garden in Ghidrais, where she spent much of her time, and pick the lettuce, cucumbers, parsley, tomatoes, mint and onion. Then, my sister and I would wash the vegetables and watch her and Imme make the salad. We often ate Fetoosh with mishwe (shish kabob and barbecued chicken). The combination was a beautiful representation of summer.
