1 large eggplant
1 clove garlic
½ tsp. salt
3 to 4 tbsp. tahini
1/8 to ¼ cup lemon juice

Directions:
Directions:
Peel the eggplant and place in boiling water for approximately 10 minutes. Drain the eggplant. Blend together the eggplant, garlic, tahini, lemon juice and salt. Pour mixture in a decorative bowl or plate and refrigerate for about one hour before serving.

You can also roast the eggplant rather than boil it. The roasting gives the eggplant a light smoky flavor.
