˝ cup barley,
2 cups water,
1 tsp. anisette seeds,
You will also need 1 cup raisins, 1 cup mixed nuts, 1 cup coconut and one cup sugar for the dryer version of this dessert.

For the liquid version, mix all ingredients and cook on medium heat. Bring to a boil and reduce heat. Let simmer for about 20 minutes. Serve in bowls.



For the solid version, mix all ingredients together and cook on medium heat. Bring to a boil and reduce heat. Let simmer for about 20 minutes. Drain the liquid. Place the barley in a large serving plate. Garnish the plate with sugar, raisins, all sorts of nuts and coconut. This is very tasty.

My mother makes amih (a barley dessert) every year on December 4th to celebrate St. Barbara’s birthday (Eed El Bourbara). Even now, with all of us grown and out of the house, she continues to make amih every year with the hope that we will pop in unexpectedly for a bowl of this warm treat. This is actually my sister’s favorite dessert. It is a simple dish but very tasty. There are 2 versions of this dessert: the liquid version and the solid version. The liquid version is made to celebrate St. Barbara’s birthday. The thick version, my personal favorite, is made to celebrate when a first tooth comes in. So, for all of us, and our children, when the first tooth was spotted, my mother ran to her cabinets, got her ingredients and began making the amih. It is a fun tradition that we hope to continue in our homes.
