4 bone-in-center-cut pork chops (about 1 inch thick)
Kosher salt
1/2 tsp Cajun seasoning
2 tbs extra-virgin olive oil
1 tbs unsalted butter
1 large onion, sliced 1/4 inch thick
1 tbs fresh thyme, chopped
1 1/2 cups low-sodium chicken broth
2/3 cups buttermilk

1. Sprinkle cops with salt and Cajun seasoning. Dredge chops in flour to coat, tap of any excess flour. Reserve remaining flour.
2. Heat oil in large skillet over medium high heat. Brown chops each side, about 2 to 3 minutes each side. Transfer to plate.
3. Add butter , onion, thyme and a pinch of salt to the skillet. Cook until golden brown, about 10 minutes. Add 2 tbs of flour and cook for 1 minute, stirring. Add chicken broth, bring to boil and cook until reduced by one-third, about 2 minutes.
4. Add the buttermilk and return chops to the skillet. Bring sause to simmer, then reduce meat to medium-low and cook until sauce is thickened and chops are cooked through, about 10 to 12 minutes.
