Sift twice the following dry ingredients:
3 cups four
1 tsp. salt
4 tsp. Baking Power
1 tsp. Baking Soda
2 tsp. Cinnamon
Beat the following ingredients:
1 1/4 cups vegetable oil
2 cups sugar
Add:
4 eggs, 1 at a time
1 bunch carrots (about a pound) shredded
Optional: 1/2 c raisins (soaked)
Optional: 1 c walnuts

Directions:

Mix all ingredients together.
Pour into a tube pan that is greased and floured or you can use Pam's baking spray.

Bake for 1 hour (or until toothpick comes our clean) at 350 degrees
