2/3 cup boiling water
1 small package (4-serving) lemon jello
2 teaspoons grated lemon peel
2 tablespoons lemon juice (fresh squeezed)
½ cups cold water
Ice cubes
1 tub (8 ounces) cool whip
1 graham cracker crumb crust

Directions:
Directions:
Dissolve jello. Stir in lemon peel and juice. Mix cold water and ice to make 1 ¼ cups. Add to jello, stirring until slightly thickened. Remove any remaining ice. Stir (whisk) in cool whip. Spoon into crust. Refrigerate 6 hours to overnight until firm. Garnish with fresh fruit (raspberries).
