3 cups cooked rice
3 to 4 cups meat (turkey, chicken, ham, beef; do not mix meats) - diced
1 cup shredded cheese
2 cans cream of chicken/celery/mushroom/broccoli soup
1 cup milk
1 12-16oz bag frozen veggies (stir fry/mixed varieties work great)
Additional 1 cup cheese for topping, can mix in 1 cup crumbled soda crackers if desired.

Cook rice according to package directions. While rice is cooking, dice & cook meat (I usually use 2 to 3 chicken breasts, unless I have leftovers). Shred cheese. Mix all ingredients except topping cheese & crackers. Spread mixture in an ungreased 9x13" pan. Top with cheese & crackers. Bake uncovered at 325 º for 1 hour.

This is a versatile recipe depending on the meat/soup/veggies used. Try cheddar cheese soup and add salsa instead of milk. I've also made it using a brown & wild rice mix with left-over turkey & a croûton topping. Be creative!
