4 chicken breast cutlets
salt and pepper
flour
evoo
2 T. butter
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup capers, drained
1/3 cup fresh parsley, chopped

Directions:
Directions:
Season chicken with salt and pepper. Dredge lightly in flour.
Heat evoo in large skillet. Brown the cutlets, 2 at a time in the skillet. Put chicken on plate.
Add lemon juice, stock and capers to pan. Bring to boil, scraping up browned bits. Add butter and stir. Check for seasoning. Return the chicken to the pan and simmer for about 5 minutes. Serve the chicken with the sauce and garnish with chopped parsley.
