2 Gallons water
1 1/2 Cups canning salt
3 Tbsp. Minced garlic
1 Tbsp. ground black pepper
1/4 Cup Worcestershire sauce
1/3 Cup brown sugar
Other seasoning as desired (rosemary, thyme, etc.)

Directions:
Directions:
In a large bucket or container large enough to hold your bird, mix together all of the ingredients.
Place your bird in the bucket making sure it is completely covered with brine. use a weight to hold it down if needed.
Refrigerate and soak bird for up to two days before smoking or roasting.
Rinse bird well before cooking.
