2 tbsp olive oil
1 large onion, chopped medium
4 stalks celery, sliced 1/4" thick
4 medium carrots, cut in half, and sliced into 1/2 moons.
2 tbsp. garlic, finely chopped
2 - 900 ml tetra paks chicken broth
1- 10 ounce can condensed chicken broth
2 tbsp dried summer savory
2 bay leaves
1 sprig fresh thyme
4 boneless skinless chicken breasts
4 boneless skinless chicken thighs
salt and pepper

Dumplings:

2 cups flour
4 tsp baking powder
1 tsp salt
1-1/4 cups milk (any kind)
2 tbsp chives, finely chopped (optional)

Directions:
Directions:
Add oil and sweat onions, celery, and carrots for approximately 5 minutes, add garlic and summer savory. Cook another few minutes.

Add chicken and chicken broth. Add bay leaves and thyme.

Simmer for 45 minutes to an hour.

Remove chicken and cool. Cut up and shred. Add back to broth.

Bring back to a simmer for dumplings.

For dumplings, mix dry ingredients, and add the milk. May take a little more milk than stated. Don't overmix.

Add one tablespoon at a time to broth, dipping spoon in broth in between to non stick the spoon... Cover and simmer dumplings for 15 minutes. Don't open cover!!

This is an old family recipe. Maybe the oldest. Gramma Elliott made this when dad was growing up. Mom took it and re-made it! She and I then used summer savory instead of the age old thyme. The best chicken and dumplings anyone has every had!!
