2 onions, chopped in large chunks
4 potatoes, washed, peeled and cut in chunks
1 lb. carrots, washed, peeled and cut in chunks
1 red pepper, diced
1 green pepper, diced
2-3 cloves garlic, smashed
1 T. oregano
1 T. parsley
1 T. basil
2 cups wine
16 oz tomato sauce
salt and pepper to taste
1.5 lbs. beef, cubed
1 cup flour
1 T. olive oil

Directions:
Directions:
In large skillet, add 1 T. olive oil, about 1/4 cup of red peppers, green peppers, onions and some garlic. Saute for a few minutes. Roll the cubed beef into the flour adding the beef to the saute pan and saute all the beef until all sides are brown add liquid as needed.
Remove beef from the sauce pan and place in a heavy stockpot. Saute the rest of the onions, peppers and carrots a little. Add to the stockpot. Add the remaining ingredients to the pot. Make sure the beef is covered with liquid. Cook on low heat until liquid boils, then turn down to simmer until ready to serve.
