2-4 cups chicken, cooked and diced
2 T. fresh parsley, chopped
1 1/2 cups apples, sliced
1 T. fresh chives, chopped
1/3 cup celery, diced
1 pinch of kosher salt
1/3 cup red onion, diced
1 pinch black pepper
3/4 cups mayonnaise
1/3 cup almonds, sliced
1 T. lemon juice
1/3 cup seedless grapes
1/4 cup fresh tarragon, chopped
1/3 cup raisins

Directions:
Directions:
Combine the chicken, apple, celery, and onions in a medium bowl. Chill. In a small bowl, combine the mayonnaise, lemon juice, tarragon, parsley, chives, salt and pepper, Mix well and add to the chilled chicken mixture; stir to combine. Gently fold in the grapes, raisins, and almonds. Make sure everything is coated with the mayonnaise. Top with a few extra grapes. Refrigerate for 1 hour (if possible-people tend to eat it right away here). Scoop and serve on slices of bread or on a bed of lettuce, top with an extra slice of almond and a sliced strawberry.

A big family favorite here at our house. Only with company do I get to plate it nicely and serve with style, the family stands at the ready with forks in hand when I make it for them.
