1 lb. split green peas, dry
4 T. butter
1 cup carrots, chopped
2 T. flour
1 cup celery, chopped
1 onion, chopped
salt and pepper to taste
speck of mace

Directions:
Directions:
Combine peas, carrots, celery and onions in 3-quarts of water and simmer until vegetables are soft.
Cool slightly. Puree with a stick blender until smooth. Make a roux with the butter and flour: In a small sauce pan melt butter, remove from heat and blend in the flour. Continue to cook very carefully until bubbly. Combine the roux with the soup. Salt and pepper to taste and add the mace. Adjust the liquidity with enough water to a consistency that you like.
