½ tsp. grated lemon rind
2 T. fresh lemon juice
2 T. olive or avocado oil
2 T. honey
¼ tsp. salt
¼ tsp. pepper
4½ c. seeded chopped tomatoes, a mix of red and yellow, cherry, Campari, or heirlooms, basically anything works
2 tsp. chopped fresh parsley
¼ c. finely chopped red or sweet onion
1 lemon thinly sliced

You may add-in:
½ English cucumber chopped
1 avocado chopped

1. Combine first 6 ingredients in a medium bowl.
2. Add tomato, parsley, and red onion; toss gently to coat.
3. Marinade 15 minutes, up to 30 minutes. Garnish with lemon slices, if desired.
