½ red onion chopped small
1 tomato chopped small
1 green pepper chopped small
1 can regular Rotel
1 can cilantro lime Rotel
1 can black beans drained and rinsed
1 small can shoe peg corn drained
Chopped fresh cilantro (as much as you like for your taste)
½ cup Italian dressing
1 lime (for juice)

Mix above ingredients (except lime) in a large bowl. Stir and chill for a couple hours in the fridge. Squeeze in the juice from one lime right before serving.

This recipe makes a good bit of salsa- about 8 cups.

This salsa is refreshing and so delicious! It is always a huge hit at parties. It is yummy with lime chips, but scoops work really well, too.
