4 boneless chicken breast cut into 4 - 5 strips
salt and coarse black pepper
5 T butter
2 garlic cloves minced
1 c mushrooms sliced
19 oz can of whole tomatoes
19 oz can of Italian stewed tomatoes
1/2 c white or blush wine
1 c heavy cream

Directions:
Directions:
Dry chicken strips rub with salt and pepper.
Heat 3 T butter in deep skillet saute mushrooms, add garlic and cook until mushrooms are tender, remove and set aside.
Add remaining butter to skillet, add chicken and cook 3 - 4 minutes each side until browned.
Return mushrooms to skillet, add wine and tomatoes.
Simmer for about 1 hour.
Season with salt, pepper, oregano, basil and butter.
Just prior to serving add cream and simmer until sauce has thickened. Do not allow to boil.
Serve with pasta, garnish with parsley and parmesan

The most important ingredient in this recipe is butter, if you skimp on the butter you will skimp on flavour.
If mixture boils after cream has been added it will curdle.
