3-4 slices bread
1/2 c. milk
1 lb. ground beef
1 lb. ground pork
3 eggs
1 c. tomato relish (recipe below)
1 tsp. thyme
salt and pepper, to taste

Tomato Relish:
2 tsp. vegetable oil
1 small onion, chopped
garlic, to taste (may use garlic powder)
Italian seasoning or oregano, to taste
1 red pepper, chopped
1 green pepper, chopped
2 cans diced tomatoes, do not drain
1 T. parsley
1/2 c. ketchup
2 T. Worchestershire sauce
salt and pepper, to taste

Preheat oven to 350º

Step 1: Prepare relish. Coat large skillet with oil and place over medium heat. Saute' onion, garlic and Italian seasoning or oregano for a few minutes to create a base flavor, stirring often.
Step 2: Add red peppers, green peppers and cook a few minutes to soften, stirring often. Add tomatoes, stir in parsley, ketchup, Worchestershire, salt and pepper; simmer 10 minutes, stirring occasionally. Remove from heat and set aside. Yields about 4 cups.
Step 3: Soak 3-4 slices of bread in milk, set aside. Combine beef and pork in large mixing bowl; squeeze out milk from bread (discard milk); add the bread, eggs, 1 cup of relish, thyme, salt and pepper to the meat. Mix well with hands. Free form into loaf shape on parchment paper on cookie sheet or place loaf in large baking dish that has been sprayed with nonstick cooking spray. Top loaf with about 1/2 cup of tomato relish. Bake at 350º for 1-1 1/2 hours. Cook until juices run clear. Pouring off excess juices during bake time will be helpful. When done, remove from oven and let stand for about 15 minutes. Slice and serve with leftover relish.
