2 cans diced tomatoes, do not drain
1 T. parsley

2 T. Worchestershire sauce

Step 3: Soak 3-4 slices of bread in milk, set aside. Combine beef and pork in large mixing bowl; squeeze out milk from bread (discard milk); add the bread, eggs, 1 cup of relish, thyme, salt and pepper to the meat. Mix well with hands. Free form into loaf shape on parchment paper on cookie sheet or place loaf in large baking dish that has been sprayed with nonstick cooking spray. Top loaf with about 1/2 cup of tomato relish. Bake at 350 for 1-1 1/2 hours. Cook until juices run clear. Pouring off excess juices during bake time will be helpful. When done, remove from oven and let stand for about 15 minutes. Slice and serve with leftover relish.
